Red Beans And Rice
See all those ingredients up there? Yeah, I’m going to take those and make some of the greatest Red Beans and Rice you’ve ever had. So no fooling around, let’s get to this.
Ingredients:
- 1 lb sliced Andouille Sausage
- 2 slices Bacon
- 1/4 large White Onion, diced
- 3 cans Red Beans
- 2 diced Roma Tomatoes
- 5 sliced Baby Sweet Peppers
- 2 cloves Garlic, diced
- 1 (12 oz) White Ale
- 1 sprig Rosemary, striped
- 4 dried Pequin Peppers
- 4 Bay Leaves
- 2 Tbsp Olive Oil
- 1 Tbsp Salt
- 1 Tbsp Cracked Black Pepper
- 1 cup Dry White Rice
- 2 1/2 cup Water
- 1 Tbsp Butter
Directions:
- First, cook your Bacon in a medium cast-iron skillet over low heat until it’s nice and crisp.
- In the same skillet, at the same temperature, in the bacon grease, brown the sliced Andouille Sausage.
- Open your Red Beans and filter off the effluence from the cans and put the Beans in a large Crock Pot.
- Crumble the Bacon and add it and the browned Sausage to the Crock Pot.
- Take your sliced Tomatoes, Sweet Peppers, diced Onion, Garlic, your Bay Leaves, Rosemary, and Pequin Peppers and mix together in an appropriately sized bowl.
- Turn the heat to high under your cast-iron skillet and pour in Olive Oil.
- Add the mix from the step 5 and toss until veggies are lightly scorched, but not cooked.
- Pour mix into the Crock Pot.
- Add White Ale into the Crock Pot along with Salt and Pepper.
- Cook at High of 7-8 hours making sure to stir regularly.
- Make White Rice in a Rice Cooker, or follow these instructions if you’re like me and still don’t have one of those.
- Pour 1 cup White Rice in a pan.
- Add 2 1/2 cups Cold Water to that pan.
- Add dash of Salt and 1 Tbsp Butter.
- Cook over high heat until boiling.
- Once boiling, reduce heat to low, and cover.
- Continue cooking for about 10 minutes, or until you don’t see any bubbles popping in the little holes that always form when making rice.
- Remove and serve.
- Serve on a plate of in a medium bowl by placing Rice at the bottom and ladling Red Beans over the top.
So, there you have it folks. It’s relatively quick to put together, but it does take some time to make, but it’s set it and forget it type of cooking. It is brilliantly good stuff though.
